Black Bean Mushroom Veggie Burger

In short, this is one of the simplest veggie burger recipes I know. The mix of beans, mushrooms and onion – with a bit of spices, creates a hearty veggie burger. I have to admit, I am not a vegetarian, but every bite from this burger does not make me miss meat.

Some tips:

  • You can use any type of mushroom to chop up. I’ve tried Portobello and its variants, Shiitake, and Cremini so far and they were all delicious!
  • In this picture, I pan-fried the burger patties to save some time, and after flipping them over for the first time, I added some shredded cheese to melt while the patty fully cooks. You can also tried cheese slices.
  • I highly suggest mashing with a fork or masher and not a blender, to keep some chunky pieces of bean. Or else, it’ll make a mushy patty.

As any burger, add any toppings you like! Tomatoes, lettuce, cheese, ketchup, mustard, mayo… and BAM – you got yourself your easy veggie burger!

Ingredients:

  • 1 tablespoon olive oil (or any cooking oil at hand)
  • 1 cup mushrooms (portobello/bella, shiitake, cremini works best) – diced very finely
  • 1 15-oz can of black beans, drained and rinsed
  • 1/4 cup of finely chopped red onion
  • 2-3 cloves of garlic, minced
  • 1 tablespoon soy sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/4 cup panko breadcrumbs
  • 1 egg, beaten
  • 4 burger buns
  • 1 tomato cut into slices
  • Arugula or lettuce
  • Toppings to your liking: ketchup, mayonnaise, pickles, mustard, etc.

Instructions:

  1. In a pan, add olive oil and mushrooms and cook for 2-3 minutes. Mushrooms should be soft and browned. Set aside in a small bowl.

  3. To the beans, add the cooked mushrooms, chopped onion, garlic, soy sauce, salt, pepper, breadcrumbs and egg. Mix together with a spatula or with your hands.
  4. Divide the mixture into 4 and form circle patties, about 1/2 thick.
  5. Pan fry method: Add about a tablespoon of oil to a pan and fry the patties for about 5 minutes on each side, or until the edges of the patty have browned. Be careful not too flip and handle them too much as they may break.
  6. Oven bake method: Cover a baking sheet with parchment paper, or coat the sheet with cooking spray. If you do not have these, you may drizzle some olive oil instead. Bake the patties at 425 degrees for 8 minutes, then flip the patties and cook for another 8 minutes.
  7. Toast your burger buns (you can add them alongside the patties as they bake for a few minutes, just don’t forget them!)
  8. Add some butter if you’d like.
  9. Top the bun with a patty, then tomato slices and lettuce or arugula.
  10. Add toppings like ketchup or mustard to your liking before adding the top half of the bun!
